Blackwater Pastures takes its name from the swamp that runs through the property — and the land itself goes back further than the farm's current owners. Anna's grandfather started the operation in Brooks County in the 1950s, and three generations later, Matt and Anna are still raising cattle on that same South Georgia ground: long growing seasons, Bahia grass, heat, humidity, and rainfall that never quite behaves the same way twice.

"We wanted to raise cattle in a way that works with the land rather than simply taking from it."

Matt and Anna run a rotational grazing system built around one idea: keep the cattle moving, and give the pasture time to recover before they come back. It means paying close attention to soil health and forage quality alongside the health of the herd itself — an ongoing process, by their own account, but one where the results show up in the pasture and in the cattle. The farm offers both grass-fed, grain-finished beef and seasonal 100% grass-fed, grass-finished beef, dry aged a minimum of 14 days.

The direct-to-consumer side of the farm has become just as central as raising the cattle itself. Matt and Anna describe a familiar pattern: a customer buys a steak or a few pounds of ground beef at a farmers market, gets to know the farm and how the cattle are raised, and eventually comes back for a bulk share — an eighth, a quarter, sometimes half a cow. It's that relationship, more than convenience, that keeps them selling directly rather than wholesale.
